Mists and Mellow

Ingredients for 1 portion:

  1. 300 gr. Beef railway
  2. 100 gr. San Marzano tomato
  3. 100 gr. Chimichuri breading
  4. 70 gr. Pecorino cream
  5. 20 gr. Rocoto chili paste
  6. 120 ml. Gravy sauce
  7. 1 celery 
  8. 1 dried onion 
  9. 3 peppers
  10. 2 carrots 
  11. 2 zucchinis
  12. 1 bay leaf 
  13. 12 gr. Spicemix del mondo Masala
  14. 40 ml. Dairy cream 
  15. Wine
  16. 1 egg


  1. In a frying pan sear the meat on all sides. Remove it and place the vegetables. Sauté until they get a color and then bring back the meat.
  2. Season with SpiceMix del mondo Massala and add wine. Add the gravy sauce and water and cook for 2.30 hours.
  3. Once cooked, dissolve it and allow it to cool.
  4. Add some pecorino cream and shape it into the shape you want. Τhen use the flour, egg and the chimichuri breadcrumbs.
  5. Cut the carrot, pepper and zucchini into brunoise and marinate with rocoto chili paste.
  6. Fry the breaded ragout at 170 degrees for 6 to 7 minutes.
  7. In a small saucepan, heat the pecorino cream with the dairy cream and mix.
  8. Also, heat the San Marzano tomato with a little olive oil, salt and pepper.
  9. Sauté the vegetables with the chilli paste for 3 minutes and you are ready to serve.
  10. Place the vegetables in the centre and the ragout croquette on the top. Add the tomato sauce and the pecorino cream. Finally, garnish with parsley oil and sprouts.
