Ingredients for 8 cocktails:
- For the Vodka flavoring:
- 500 ml Vodka
- 30 gr Rocket
- For the pear cordial:
- 600 gr Pears cut into slices
- 350 gr Panela sugar
- 200 ml Pear with Madagascar vanilla vinegar
- 200 ml Water
- 100 ml Pear liquer
- 7 gr Malic acid
- For the ice cream milkwash:
- 120 ml Sweet Vermouth
- 50 ml Dry Vermouth
- 100 ml Liquer
- 250 ml Natural lemon juice
- 400 ml Milk
- For the pickled pear:
- 250 gr Pears cut into slices
- 350 gr Panela sugar
- 100 ml Cherry liquer
- 150 ml Rice vinegar with Sakura cherry blossom
- 2 gr Salt
- 200 ml Water
Instructions:
- For the Vodka flavoring:
- Place all the ingredients together in a container and leave them for 12 hours at room temperature.
- Strain through a V60 filter, bottle and refrigerate.
- For the pear cordial:
- Place the pears and sugar in a vacuum bag and leave them at room temperature for 24 hours.
- Strain and then add with the rest of the ingredients in a saucepan and heat at 60 degrees for 10 minutes.
- Bottle and place in the refrigerator.
- For the milkwash:
- In a measuring cup, mix the ingredients and then transfer the mixture to another measuring cup where you have already placed the milk. Always make sure to place the mixture in the milk and never the other way round.
- After leaving it in the fridge for 12 hours, strain it into a superbag and pass it through a V60 filter.
- Bottle and refrigerate.
- For the pickled pear:
- In a saucepan, add all the ingredients and boil the mixture.
- Remove from the heat and set aside until it comes to room temperature.
- Pour the mixture into a jar and place it in the refrigerator.

- 120 ml Premix Cocktail Milkwashed
- Pickled pear
