Preparation time: 12 ώρες

Ingredients for 8 cocktails:

  1. For the cordial
    • 200 ml Fresh passion fruit puree without sugar
  2. For the orange Liquer flavoring
  3. For the Milkwash
    • 440 ml White rum
    • 200 ml Orange liqueur
    • 280 ml of the cordial made
    • 120 ml Lime juice
    • 300 ml Whole milk
  4. For the exotic fruit powder


  1. For the cordial
    • Place all the ingredients in a small saucepan at 80 degrees and stir slowly until the sugar melts.
    • Remove it from the heat and let it cool down.
    • Finally, strain it and put it in a bottle and then refrigerate.
  2. For the orange liqueur flavoring
    • Place the 2 ingredients together and follow the Cold infusion method for 15 minutes.
    • For the powder
    • Place all the ingredients in a thermix at 70 degrees and beat for about 15 minutes and check until the mixture is powdery.
  3. For the  Milkwash
    • In a 5 litre measuring jug, place all the ingredients except the milk and mix.
    • In another measuring jug, place the whole milk.
    • Then pour your entire product from the 1st jug into the one with the milk. (Always the Cocktail in the milk and not the other way around).
    • Put it in the fridge for 12 hours.
    • After 12 hours remove it and strain it in a superbag ( 100micro)
    • Use a V60 filter to make the cocktail cleaner and almost transparent.
    • Place it in bottles and then in the fridge.
  4. For the exotic fruit powder
    • Add the crumbe in the Thermomix for 20 minutes in 60Vc.
