Ingredients for 1 tart (6-8 portions):
- For the fruit sauce:
- Mix forest fruit 300 grams
- Wild fig jam 200 grams
- For the cheese cream:
- Pecorino cheese cream 300 grams
- Panna Cotta 2 sachets
- Milk 500ml
- Cacao Pepper Allspice-Blackberry preferably
- For the tart dough:
- All purpose flour 300 grams
- Butter 150 grams
- Confectionery sugar 120 grams
- 1 egg
- 2 table spoons water
Preparation time: 2 hours and 20 minutes
Method:
- For the fruit sauce:
- Place the Mix forest fruit in a small pot without their juice.
- Then add the fig jam and warm up the mixture until it becomes homogenous, for about 10 minutes. If it becomes too thick, thin it with some of the fruit juice.
- For the cheese cream:
- In a bain-marie heat the milk and the μπεν μαρί ζεσταίνουμε το γάλα με την Pecorino cheese cream until they become homogenous.
- Add the mix for the Panna Cotta and the Cacao Pepper Allspice-Blackberry and stir it in a mixer until it becomes fluffy.
- For the tart dough:
- Beat the flour, sugar, butter and egg in a mixer until you get a dough.
- Add water and stir until the dough becomes more stable and can be molded.
- Let the dough rest for an hour in the fridge.
- Afterwards, shape the dough with a rolling pin and place it in a tart pan.
- Pierce with a fork and bake at 180 degrees for half an hour.
- Take it out of the oven when it starts to get a nice golden colour and let it cool down.
- Place the cream inside the tart pan until it fill it all up and let it cool in the fridge for about 3 hours.
- Spread the fruit sauce on the tart and serve.
