Tex Mex Burger with sweet potato sticks & cheddar sauce

Ingredients for 4 portions:

  1. 1 Κg minced beef
  2. 120 gr. Tex mex
  3. 80 gr. Tacomix
  4. 2 gr. Aji amarijo
  5. 90 gr. Spare ribs sauce
  6. 150 gr. Pecorino cheese cream
  7. 100 gr. Adzuki beans
  8. 20 ml Avocado oil
  9. 15 ml Pepper vinegar (Espelette)
  10. 50 gr. three-colour-pepper mustard
  11. 70 gr. Perla rossa
  12. 150 ml Milk
  13. 200 gr. Cheddar
  14. 2 items of avocado
  15. 3 eggs
  16. Salt, pepper
  17. For the bun:
    1. 700 gr. All-purpose flour
    2. 200 gr. Venere flour
    3. 12 gr. Sepia
    4. 700 ml lukewarm milk
    5. 2 packets of dried yeast
    6. 25 ml Olive oil
    7. 25 gr. Salt
    8. 1 dash of sugar
    9. Oatmeal flakes

Preparation time: 1 hour & execution time: 10 minutes

Instructions:

  1. For the burgers:
    1. Add in a bowl the minced beef, the spicemix Tex Mex, the eggs and 60 gr of the spare ribs sauce.
    2. Ferment the minced beef and let the mixture in the fridge for 20 minutes.
    3. Form burgers that are 250 gr each of them.
  2. For the beans cream:
    1. Boil the beans until they are soft enough to be melted.
    2. Add the beans in a blender and start adding 30 gr of the spare ribs sauce, until a soft cream is created.
  3. For the guacamole:
    1. Clean and cut the avocado in cubes.
    2. Add in a bowl the avocado, the perla rosa, the pepper vinegar, the avocado oil , the aji amarijo, salt and pepper.
    3. Mix the ingredients until they become homogenous.
  4. For the cheddar sauce:
    1. Add in a pot the pecorino cream, the milk and the cheddar and in a low heat stir constantly until it becomes a soft cream.
  5. For the sweet potato sticks:
    1. Cut the sweet potatoes in sticks and put them in a baking dish.
    2. Add the olive oil, the spicemix taco mix, salt and pepper.
    3. Stir them and bake them in 230 degrees for 12 minutes.
  6. For the buns:
    1. Add in a bowl the flour, the venere flour, salt , pepper, sugar, sepia, the dried yeast and stir.
    2. Add milk, olive oil and start kneading.
    3. Let the dough rest for about 30 minutes.
    4. Divide the dough into balls of 120 gr and let them rest for 10 minutes.
    5. Dust with the oatmeal flakes and bake them in 180 degrees for 35-40 minutes.
