The three musketeers

Preparation time: 20 minutes & execution time: 15 minutes

Ingredients for 2 portions:

  1. Mignonette:
    1. 2 oysters 
    2. 50 ml Alba rosa, pink balsamic vinegar
    3. 90 gr. Little onions in pink vinegar
    4. 10 gr. Crunchy rice with garlic
    5. 3 gr. Oyster pepper
  2. Exotic:
    1. 2 oysters 
    2. 50 ml Mango vinegar
    3. 80 gr. Crumble exotic fruits (mango, passion fruit)
    4. 5 gr. Pepper Espelette D.O.P.
    5. 5 gr. Chili oil
  3. Umami:
    1. 70 gr. Kimchi
    2. 30 gr. Mayo
    3. 10 gr. Lemon coriander sauce
    4. 3 gr. Bacon flavor in powder


  1. Rinse the oysters well to remove the sand.
  2. Open them carefully and remove the “water” from the inner part.
  3. Mignonette:
    1. Chop the onions in pink vinegar.
    2. Place them in the shell.
    3. Add the crunchy rice with garlic.
    4. Add the alba rosa vinegar and finally the oyster pepper.
  4. Exotic:
    1. Place the exotic fruit crumble in the shell.
    2. Add the mango vinegar, the chili oil and finally the Espelette pepper.
  5. Umami:
    1. Chop the kimchi.
    2. Place it in the shell.
    3. Place the mayonnaise and lemon coriander sauce in a bowl and blend them until the mixture is homogeneous.
    4. Place that in the shell.
    5. Finally, add the bacon flavor in powder.
  6. Garnish the oysters with the flower mixture and serve it on a flower of salt.
